Counter onlyTwelve seats. One counter. Chef Hiro shapes each piece in front of you — aged fish flown in from Toyosu, rice seasoned with three-year aka-zu, wasabi grated to order. No menu. Only the season.
Chef Hiroshi Tanaka trained for over a decade in Tokyo's Ginza district before bringing his craft to Richmond. At Hiro Sushi, we honor the discipline of Edomae-style sushi — fish cured, aged, and marinated by hand using techniques passed down through generations.
Each evening's menu is shaped by what arrives at our door that morning. No two services are the same.
